Almost there...:)

Good Evening! I am so glad today is Thursday! This day has been very long! We had a bad windstorm last night and every time we got a wind gust our little man would start barking and when he wasn't barking he was anxiously walking around the bed. There are three things he can't deal with and that is wind, thunderstorms and fireworks. A friend of mine suggested I get a Thundershirt for him. It is supposed to help with their anxiety. I may just give it a try! After being woken up several times at 1:30 Kevin took him downstairs...I went to bed with a bad headache and my sweet husband was trying to help! So from 1:30 am until 5:15 I woken up several times! Oh well...he is so cute you cant be mad at him! Here is a picture of him:

He was waiting for Daddy to come home from work. He likes to sit up on the couch and watch out the window for him. It will definitely been an early night tonight!

Ops! I went over by a point...but I think that is ok because all week I have been under. I am not going to have an evening snack because we ate dinner too late and I am not hungry! I know I have 49 extra points for the week but I don't like to use them. The one thing that I need to get back into is the exercise. Working the late shift makes it really hard because I have to come home and make dinner and by the time I am done I am too tired and full. Next week its back to the normal shift.

Is it Friday yet??

Hello All! Sorry for missing yesterday but my day was a long one. I am working the late shift at work this week so I am not getting home until 6 and then by the time I make dinner and sit down and eat it is 7:30 or later. The last few days we have been eating leftover lasagna anyway so its not really exciting...LOL

 
It is nice not having to be rushed in the mornings though! I am going to make some crock pot beef and vegetable stew for tomorrow. That will give me some time in the morning to put it together:) I went out and walked around the campus at work 2 times which comes out to 1.28 miles. I have an app on my phone called RunKeeper and as your walking it tracks how many miles and calories you burn.
 
It is so nice to get out of the office and walk. Sometimes you just need to get away from your desk and clear your head. Here is my meals for today:

Sunday Stuff...

Hello there...another busy day...I did sleep in until almost 8:30 which was so nice! My one day a week that I can just get up when I feel like it!:) I have been wanting to get a saute pan with a higher lip on it that I can cook my chicken breasts in or for my sauces. I have a pan I use alot but it is more like a saucepan and it doesn't work as well. We decided to go to the Wrentham Outlets and see if we could find one that was reasonably priced. Here is a picture of the outlet. There was hardly anyone there...but that could be because it was in the 20's with a wind chill in the teens! Brrrrrrr
 
I wanted a good pan that will last a long time. They had a calphalon 3 quart saute pan for $119. Regular price $160. It was very heavy and well made and was on sale so we got it. I used it for my dinner tonight and it worked wonderfully!! Here is a picture of it:
After that we did some walking around...it is a huge place! Every store you could imagine was there! Stopped in at Vera Bradley because I love me some handbags! LOL I got a purse and wallet that would have normally been $125 and I got it for $55. It is soooo cute too. It looks like a giant coin purse. Here is a couple pictures of the purse. After this we went to BJ's to pick up a few things and then headed home to have lunch. After lunch I watched some TV and fell asleep for a little bit. Then made the best 8 point lasagna that I have ever had! I absolutely love the Looney Spoons Cookbook...you can get it from QVC and I think the bookstores have them too! Here is what it looks like:

This dinner was more work than the other meals I have made...definitely a weekend meal. But we have enough leftover to feed us for a few days! It was so good and I bet it will be even better after it sits in the fridge overnight! It is definitely on our list of favorite dinners! I didn't have an evening snack because I am just too full and don't feel like I should eat if I am not hungry...even though that means I didn't get all my points in for the day. Weekly weigh in results and recipe!

Hello there...Happy Saturday!! Another busy day...well at least the beginning of the day. Got up at 7am to some snow on the ground...our nightly lows this week have been between 3 and 13 degrees so the roads were icy. We decided to go to the 9:00 Weight Watchers meeting to give the ice a chance to melt a little. We headed out and I had forgotten to eat anything so we were both really hungry. We had some things we wanted to do after the meeting so we had to plan some lunch. Our meeting wasn't as full as it usually was and there were a lot of people leaving as we were coming in..that should have been a sign right there of how long the meeting was going to go. The meeting was about planning your dinners. We got into groups (which we hate doing) and come up with a dinner that meets the following criteria: 10 points or less, at least 3 power foods and 3 veggies in the meal. Well we decided to use the Baked Turkey and Jack Cheese Chimichungas and a side salad. The Chimichungas are only 6 points a serving and has 5 power foods in it and a side salad with Lettuce, Tomato and cucumbers with light ranch dressing which was 2 points. So its an 8 point dinner! I have had a request to share the recipe. The only thing I do different is I used ground chicken instead of turkey:
 
Baked Turkey and Jack Cheese Chimichangas
Weight Watchers Points - 6
 

No need to fry this traditional Mexican dish: Simply bake until the tortillas are lightly browned and crisp. Serve with spicy salsa and a dollop of sour cream.

2 spray(s) cooking spray
1/2 pound(s) uncooked ground turkey breast
16 oz fat-free canned refried beans
1 3/4 cup(s) fat free salsa
4 1/2 oz canned green chili peppers, mild, drained and diced
1 tsp chili powder
3 Tbs uncooked scallion(s), thinly sliced
1 cup(s) shredded, reduced-fat, Monterey Jack cheese
8 item(s) (large) burrito-size wheat flour tortilla(s)
1 cup(s) fat free salsa
1/2 cup(s) fat-free sour cream

1. Preheat oven to 350ΒΊF. Coat a large skillet with cooking spray. Coat a 13- X 9- X 2-inch baking dish with cooking spray.

2. Add turkey to skillet and cook over medium-high heat until lightly browned, about 5 minutes. Drain any excess liquid from pan and then add beans, 1 3/4 cups of salsa, chili peppers, chili powder and scallions. Cook until heated through, about 3 minutes; stir in cheese.

3. Meanwhile, wrap tortillas in foil; warm in oven for 10 minutes.

4. Assemble chimichangas by spooning about 1/2 cup of turkey mixture onto each tortilla; fold in sides and roll up.

5. Place chimichangas, seam-side down, in prepared baking dish. Bake, uncovered, until tortillas are crisp and browned, about 20 minutes. Serve each topped with 2 tablespoons of salsa and 1 tablespoon of sour cream

Servings: 8

As I said earlier we hadn't eaten breakfast and so when the meeting went on for an hour we were both getting grumpy...LOL We wanted to go to the mall to walk around and do a few things so we ended up going to Cheesecake Factory...don't panic we were good and instead of getting the normal things we would have gotten we ordered something off of their weight management menu. Each meal is less than 550 calories. I got a chicken salad sandwich with a side salad. It was pretty good but the salad wasn't so good because they used the weird lettuce that has all the bitter leaves...I like just a nice romaine and spinach salad but that's ok. We had 2 pieces of bread with a little butter. I counted 20 points for that meal only because of the mayo that was in the salad. I think it was mixed with some greek yogurt but just to be safe that is what I counted.

We went grocery shopping and I got the ingredients for this weeks meals. They will be:

Beef Stew (in the crock pot) - Looney Spoons cookbook
Lasagna - Looney Spoons Cookbook
Hamburgers and baked fries

Each meal will have leftovers for at least 2 nights. We love the Looney Spoons cookbook! We haven't had one recipe that we don't like.

Tonight we had my favorite Fried Chicken & Gravy from our New Dieters Cookbook and I will be having my bag of popcorn for my evening snack.

Oh yeah..your probably wondering how we did on our weigh in...well Kevin lost 3.6! Yay! I lost .8...Booo! However it is that time of the month that all of us women dread and I retain water like crazy!! So that screwed it up...but come next week I should have a good loss. I am just happy that I lost! I didn't exercise as much as I should have this last week so I will have to work harder on that this week!

I'm still here! :)

This has been a super long week!! I didn't blog yesterday because we had some issues with our heating in our house so with all the commotion with the repair guy I didn't get online. It was awkward making dinner and then sitting down to eat when the guy is in our basement...but I did and we had a nice new recipe. I will have to play with it a little though. The chicken was good but a little too many spices...and I forgot to drizzle the butter over the chicken before baking it. Saved some calories I guess! LOL

It has been sooooo cold here in New England! Last night the low was 3 degrees! Tonight it is supposed to get down to around 5. You walk outside and it almost takes the breath out of you! Next week the high is supposed to get up to 50! It is weird how the weather can change so quickly!

I am exhausted!!

Today was a very busy day! Work was hectic but it made the day go very fast. I had to literally drag myself out of bed this morning. Thank goodness there wasn't a lot of traffic because of the holiday so I at least didn't have to deal with that:) I wanted to try something new today. Last week I committed to taking the stairs at work and not using the elevator and doing that helped with my 3.6 pound loss last week. So this week I am going to start walking to the farthest bathroom from where I sit. I was going to go down to the first floor and that way I would use the stairs more...but the receptionist is on that floor and I feel awkward going down there to use the bathroom...if it was me I would be like "what is wrong with YOUR bathroom...LOL So I just decided to walk to the other side of the building and use that one...its actually farther than the one downstairs so that is better I think:) So we will see if that helps!

At lunch I went out for a walk. It was sunny out so I thought it might have warmed up from the 23 degrees it was this morning...so I didn't wear my coat. I am a hot blooded girl and I am always hot! At first it wasn't bad but after the wind started blowing it was probably about the same temp as this morning! By the time I walked around the campus once I was feeling pins and needles in my arms and hands so I decided I better get back inside! I KNOW MOM!! I will wear my coat next time! LOL

After work I needed to stop at BJ's and get some chicken breasts and I got bulk of ground chicken to vacuum pack and have for the baked chimichangas and some egg beaters for making the casserole (might be something we make every couple weeks) and some more fiber one brownies..so good for a sweet treat! Then after I got home I hopped on the treadmill for a half hour! Rested for about 45 minutes and then started dinner. Tonight I made Chicken Tetrizzini...so good!! Here are my meals for the day:

Beautiful Sunday...

Good morning my friends!! I made this breakfast casserole last night and put it in the fridge overnight. It was awesome! It is a layer of hash browns, reduced fat cheddar cheese, minced onion, ham and green peppers and then you pour the egg substitute on top and refrigerate it overnight. Pop it in the oven for an hour in the morning and enjoy! It makes 6 large servings and is only 5 points! I will be making this again for sure. We have enough leftovers for both of us for 2 more breakfasts.

We had it with 3 slices of Oscar Meyer Center Cut Bacon for 2 points. It was a very filling breakfast!

Very yummy!
 
Not much else going on this morning. After I blogged last night I got on the treadmill for 45 minutes and earned 2 activity points from my active link. I didn't end up eating the popcorn...it was getting too late by the time I was done.

My Day of Meals....

I'm back....LOL! Spent a few hours catching up on Facebook and printed some recipes that I have found on the Weight Watchers website and a few other sites. My goal is to try one new recipe a week. I am finding some good looking ones.

Here are my meals for the day:

BREAKFAST

BLTA (Bacon, Lettuce, Turkey & Avocado) minus the Turkey and Avocado = 15 points
Side Salad w/Ranch dressing on the side = 4 points (2 for the dressing and 2 for the croutons)

AFTERNOON SNACK
None...I gave up morning and afternoon snack for the yummy lunch!
 
DINNER
All American Thighs = 9 points
Instant mashed potatoes = 3 points
Corn = 2 points
Total points for dinner = 14
 
EVENING SNACK

TOTAL POINTS FOR THE DAY - 38!! With one point to spare!
 
Recipe for All American Thighs
 
2/3 cup Grape Jelly
1/2 cup Ketchup
1/3 cup Minced onion
2 Tbsp White vinegar
1 tsp Dry mustard
12 Bone in skinless chicken thighs
 
1. In a small saucepan, stir together grape jelly, ketchup, onion, vinegar and dry mustard.
2. Cook over med-high heat until mixture comes to a boil and the jelly is melted. Remove from heat.
3. Arrange chicken pieces in a 9X13 baking dish (I sprayed it with Pam)
4. Pour sauce evenly over chicken and turn pieces to coat both sides.
5. Bake at 400 degrees for about 40 minutes, until chicken is very tender.
 
Serves 6 (2 thighs)
Weight Watcher points = 9
 
I put together a Breakfast Casserole and put it in the fridge overnight and tomorrow morning Kevin will put it in the oven for 60 minutes...I will take a picture of it and post it tomorrow! Have a great night everyone!!
 
 
 
 

Scale and Non Scale Victories!

Hi! I hope your are all enjoying your Saturday! We had a very busy morning! Woke up a little later than I wanted to. We like to go to the 7:30 Weight Watchers meeting but we ended up going to the 9:00 one because I didn't wake up until almost 7. But that's ok because we had some running around to do after an nothing is opened before 10. So it worked out:) After the meeting we went to Dedham and picked up some things and we decided after having such a good 2 weeks we would treat ourselves by going out to lunch. We haven't been out to eat in over 2 weeks which is huge for us! We figured if we were going to treat ourselves we would go somewhere we love..Red Robin! Before you judge us..know that we looked up the restaurant in this cool app that I have on my smart phone and it gives you all the points of hundreds of restaurants. We figured out exactly what the amount of points we would be using and planned accordingly. Keep in mind Kevin has twice as many points as I do so we had plenty to use..plus we have our 49 extra points which I try not to dip into unless we do something like this.
 
I ordered the BLTA (Bacon, Lettuce, Turkey and Avocado) on a croissant, however I modified it a bit...I had them take off the Turkey and Avocado and basically had a BLT on a croissant...AND I had them put the mayo on the side so I could control how much was on it...sometimes they slather it on there so thick its gross! Instead of steak fries I had a side salad with ranch dressing on the side and instead of putting it on the salad I just dipped my fork in it before I dug into the salad and that way your getting a taste of the dressing with every bite but not that much! I learned that trick at one of the WW meetings a long time ago. It was a very successful lunch. The BLTA would have been 19 points but taking off the Turkey (they always give you ALOT of Turkey) and the Avocado I saved about 4 points I guessed. I put 2 points for the dressing because as I said I barely used much of it.
 
After lunch we took a walk around Patriot Place which is where the New England Patriots play football...they have an outside mall there. We went to the Pro-shop and bought some hats to keep our ears an head warm...it was super windy and COLD! We also had a Non Scale Victory today...we walked down and UP these stairs!!! Not easy! After I walked up I felt good but I was very winded. I have been walking up and down the stairs at work all week and thought this would be a nice challenge. I'm very proud of us! :)
 
After this we went to the grocery store and got all of our foods for the week. The store was a MADHOUSE!! They had alot of good sales. We saved about $26! Now I am watching some TV and relaxing a bit. I am making a yummy dinner tonight and I will take a picture and share it later.

It's Friday!!! :)

Hey everyone...I hope you all had a great Friday! I am feeling a little better today. Still felt a bit achy and had a headache most of the day but not as bad as yesterday. I went back to work and kept my mind busy. Sometimes that is better than just sitting around all day and thinking about it. I wasn't running a fever so I didn't think I would really be that contagious.

I packed my food for the day and forgot my yogurt at home on the counter...wasn't very happy because it is one of my favorite things I eat mid morning...but I survived! I am planning our meals for the week next week so that after our Weight Watchers meeting tomorrow morning we can go next door and do our shopping for the week! Here is the plan:

Saturday - All American Thigh (boneless chicken thigh with a homemade sweet BBQ sauce)
Sunday - Chicken Tetrazzini (from Taste of Home comfort diet cookbook)
Monday - Leftover Chicken Tetrazzini
Tuesday - Faux Fried Chicken (from Looneyspoons cookbook)
Wednesday - Baked Chicken and Jack cheese Chimichangas (Weight Watchers recipe)

Friday - Parmesan Chicken Cutlets (Weight Watchers recipe)

I am also going to make a breakfast casserole tomorrow to put in the fridge overnight and have it on Sunday morning. That may give us some leftovers for breakfast during the week. I am also going to try a recipe for baked oatmeal.

Yucky....

Good Morning all...I am posting early today because I am home with the flu and may not feel like it later. Last night after doing my exercise my legs started to get really achy and I thought it was from the exercise...but by the time I went to bed my entire body hurt including my toes! Woke up this morning with a very bad headache and congested but the good thing is I am not running a fever. I am hoping that by getting the flu shot it will just stay like this and not get worse. So many people from work have had the flu so it was only a matter of time I guess. My foods will be low today because I really don't have an appetite...but I am trying to eat so I don't go too low on points. I am drinking water more than eating to keep hydrated.

To exercise or not to exercise...that is the question...

That was the fight I was having with myself on the way home from work...I am sure everyone does this. After working all day all I want to do when I get home is flop and watch tv and veg...but I know that if I sit down when I get home there is NO way that I would get back up to exercise! I kept making excuses to myself saying "My foot is sore", "I walked the stairs today at work" and "it won't hurt to miss a day"...and then I snapped out of it! If I want to do it this time I HAVE to do it at least every 5 or 6 days...allow myself one day of rest.

So I got home and changed my clothes, put on my tennis shoes and got to it! Walked the treadmill for 1/2 hour at 2.5 mph. Went about 1 1/4 miles and burned 175 calories. I felt great afterwards...and I have to remind myself when I don't feel like doing it how good it feels once your done! I didn't plan my day well today....I usually have my whole day tracked before leaving for work in the morning but I didn't today. I didn't do bad in my eating but I ended up with 3 points left at the end of the day and I don't really think I can eat much more! I have to hard boil some eggs tonight and find my snow boots! I almost killed myself getting into work this morning. My shoes have no traction so I almost did the splits getting out of my car! LOL

Only Tuesday??

Seems like it should be at least Thursday! Today was a full day of meetings so I wasn't able to get in my walk at lunch like I wanted. I did get home and do 1/2 hour on the treadmill so that made me feel a little better about things. I still didn't hit my base line though but I will do that when I am able to do both walks. Yesterday I walked at lunch in my dress shoes (they are like loafers) and ended up with blisters on my feet! So I have learned the hard way that I HAVE to bring my sneakers to work. I put on my music and my tracker app and walked about the whole campus once...I am going to work it up to 3. That is my short term goal. My tracker app showed me that it was a total of .62 miles going around just once. So that is pretty good I think!

They are calling for snow overnight tonight...I hope not too much. It is not too bad here because when it snows they are good about treating the roads so you can drive on it fairly quickly:) Sorry I missed blogging last night. I was pretty tired and didn't feel much like getting online. I am feeling really good and feel a lot less sluggish and bloated. Eating all the veggies really does a number on the tummy! LOL

I am reading a book "It Starts with Food: Discover the Whole30" It is very interesting about all the ways that processed foods trick your brain and make you crave it more...I have alot more to read and will tell you more later.

Oh well...went over a few points today...but I did exercise so I don't feel so bad about it:) In the past I noticed that if I fluctuated the points going up and down I lost more because my body didn't get used to eating the same number every day. Have to keep the body guessing! :) I am exhausted so I am going to go and watch a little TV and hit the sack! Goonight all!!

Good day!!

I would say Happy Sunday but I hate Sunday's...because it just means that Monday follows and my weekend is over! Oh well...in 5 days another weekend will begin! :)

Today was a busy day! I slept in until 9 which was so nice! Now I will really only have one day a week to sleep in because of the WW meetings but that's ok:) We spent the morning cleaning house especially the kitchen! I have lived in this house for the last 2 years and I have never cooked so much! If anything we are going to save tons of money on not eating out or ordering pizza! I got my dream kitchen and I will get lots of use out of it. Here is a picture of my kitchen:
 
 
After cleaning the kitchen I worked on cleaning my craft room so that we can use the treadmill. After I finished cleaning I got the itch to walk...so I hopped on the treadmill and did about 15 minutes. It felt really good! I will do 1/2 hour a day to start and then work it up to an hour starting tomorrow. I spent the afternoon putting recipes into a new program I bought to plan my meals called Living Cookbook. I LOVE it! You can load recipes from the Internet with one click and create shopping lists. It has a calender that you can plan your meals up to a month if you wanted to! It will help me alot! We are currently watching the Patriots game...GO PATS!!

Dagnabit! I somehow recorded 7 points for my milk this morning (it made it 2 1/2 servings instead of 1/2 cup) and so now I have 6 points left! I thought I was 39 even which is my new number after losing the 2 pounds. Oh well...make it up later I guess! LOL

Happy Saturday friends!! It was a very good day! Woke up at 6 this morning so that we could go to our Weight Watchers meeting. Kevin and I both were not really looking forward to going because according to our scale (which I am going to put down in the basement) neither one of us lost weight...in fact it told me I gained .4.  We got to the meeting and weighed in and to our surprise we lost weight!! I am going to make you all wait until the end of the post to find out how much! LOL
 
I really like our leader. She is so enthusiastic for being so early in the morning! She is also really funny. Today we were talking about how we can get more fruits and veggies into our meals. I don't really have that problem because I LOVE my fruits and veggies and I have at least one of them in every meal. She was talking about all the different ways you can enjoy them. Roasting them...stir fry and just raw which is how I like mine. I might try roasting them sometime. How do you like them?
 
After the meeting we went to the grocery store (right next store to the meeting place) and picked up our weeks worth of groceries. Then we went home and I cleaned the kitchen and watched a little TV and then we went and had our car serviced...and went to BJ's. At the grocery store they had a special on the baby carrots...buy 2 for 5 dollars. They were 1 pound bags. Well at BJ's you can get a 4 pound bag for about $4.99...so that was the main reason we went. I also got some eggs that I am going to hard boil. I watched a video on YouTube about organizing your kitchen and one lady hard boiled her eggs and put them back in the carton. How did she know which were hard boiled you ask? She drew little smiley faces on them to show which ones were hard boiled and which weren't! Very clever! We got some almonds and some grape tomatoes...:) I wanted to get some more strawberries but they weren't looking so hot.
 
After that we came home and had leftover chimichangas from last nights meal and I went upstairs to watch some tv...before you know it I fell asleep and woke up 2 hours later! I guess that is from getting up so early. I haven't been feeling the best today and hope that I am not coming down with the bug that everyone at work has been getting! Don't need that!

In logging all of our meals I have noticed a pattern...we love Mexican food! LOL Doesn't matter...as long as it meets the points we will eat it! Now...what you have been waiting for...

I wasn't thrilled with the number I lost only because usually the first week you usually lose alot more..but I have to remember that with this active link and doing the 8 day assessment I couldn't do any exercise or it would screw up the base line that it was trying to figure out. It ends Monday so I will start walking on the treadmill next week and get it moving a little more...but I am still proud of us and think that we did great! The scale is so off compared to the Weight Watchers one..and you know what brand it is?? WEIGHT WATCHERS!  LOL

TGIF!!

I can't tell you how happy I am that it is Friday!! Its been a very long week but a very successful week with our eating! I have tracked all week, packed lunches every day and cooked dinner every night! The challenge for next week is to find some different things to eat. I don't want to get bored with the same foods every day.

I don't have much plans for the weekend. We are going to our WW meeting tomorrow meeting and taking our car in for service. Other than that we will just do whatever! I love those types of weekends when you don't have anything specifically planned:)

I have been wearing the Active Link for the last 5 days. You have to wear it for the first 8 days and it does an assessment before it will actually start giving you challenges to earn activity points. I really like that I can just strap it under my clothes and no one even knows I am wearing it. I think I will be done with the assessment on Sunday. I do feel like it motivates me more and makes me want to be more active. It opens your eyes as to how much you are inactive when you look at the graphs of activity throughout the day.

Ok...now on to the food for the day...

Still here...:)

Hey guys...sorry I missed posting yesterday...just didn't feel much like getting online. Stayed on plan though. I am still trying to get in the habit of taking pictures of my meals and I am forgetting! But I can still write them down:)
 
Not much going on to write about. I stopped at the grocery store on the way home yesterday because we were running out of fruit and I had to pick up a few things for a recipe I will be making in the next few days. Other than that just a boring day. Kevin had to work late last night so I ended up having a couple frozen dinners in one day. I try not to do that because of all the sodium. Day 4...still going strong...well kind of!

Is today only Tuesday?? Seems like it should be Thursday already! Today was an ok day in eating. I tracked and at almost all my points, however I can't say that it was the best choice in foods to make my points. My poor hubby had to work late tonight so it makes it hard for us to stay on plan..but I did make the dinner that we planned and will warm it up when he is home.
 
Does anyone else out in bloggy land get a very strong urge for something sweet right after eating a meal? It is not something that is only because I am eating better I have always been that way. I don't know why...but I need to figure it out.
 
I watched Biggest Loser last night and I have to say I really like the way Jillian was in the second half of the show...when her team told her about her yelling at them makes them anxious...and how she took that to heart and she even complimented them!! That was awesome. It was so sad though at the end when she cried:(
 
Anyway on to my day of eating...I think that for breakfast I am going to try having some scrambled egg whites with my yogurt and banana. I am only eating 3 points for breakfast and it isn't keeping me full for long. Here we go...
