Almost there...:)

Good Evening! I am so glad today is Thursday! This day has been very long! We had a bad windstorm last night and every time we got a wind gust our little man would start barking and when he wasn't barking he was anxiously walking around the bed. There are three things he can't deal with and that is wind, thunderstorms and fireworks. A friend of mine suggested I get a Thundershirt for him. It is supposed to help with their anxiety. I may just give it a try! After being woken up several times at 1:30 Kevin took him downstairs...I went to bed with a bad headache and my sweet husband was trying to help! So from 1:30 am until 5:15 I woken up several times! Oh well...he is so cute you cant be mad at him! Here is a picture of him:

He was waiting for Daddy to come home from work. He likes to sit up on the couch and watch out the window for him. It will definitely been an early night tonight!

Ops! I went over by a point...but I think that is ok because all week I have been under. I am not going to have an evening snack because we ate dinner too late and I am not hungry! I know I have 49 extra points for the week but I don't like to use them. The one thing that I need to get back into is the exercise. Working the late shift makes it really hard because I have to come home and make dinner and by the time I am done I am too tired and full. Next week its back to the normal shift.
 
I am going to go watch some tv and probably fall asleep! LOL Catch you all later!

Is it Friday yet??

Hello All! Sorry for missing yesterday but my day was a long one. I am working the late shift at work this week so I am not getting home until 6 and then by the time I make dinner and sit down and eat it is 7:30 or later. The last few days we have been eating leftover lasagna anyway so its not really exciting...LOL

 
It is nice not having to be rushed in the mornings though! I am going to make some crock pot beef and vegetable stew for tomorrow. That will give me some time in the morning to put it together:) I went out and walked around the campus at work 2 times which comes out to 1.28 miles. I have an app on my phone called RunKeeper and as your walking it tracks how many miles and calories you burn.
 
It is so nice to get out of the office and walk. Sometimes you just need to get away from your desk and clear your head. Here is my meals for today:

Sunday Stuff...

Hello there...another busy day...I did sleep in until almost 8:30 which was so nice! My one day a week that I can just get up when I feel like it!:) I have been wanting to get a saute pan with a higher lip on it that I can cook my chicken breasts in or for my sauces. I have a pan I use alot but it is more like a saucepan and it doesn't work as well. We decided to go to the Wrentham Outlets and see if we could find one that was reasonably priced. Here is a picture of the outlet. There was hardly anyone there...but that could be because it was in the 20's with a wind chill in the teens! Brrrrrrr
 
I wanted a good pan that will last a long time. They had a calphalon 3 quart saute pan for $119. Regular price $160. It was very heavy and well made and was on sale so we got it. I used it for my dinner tonight and it worked wonderfully!! Here is a picture of it:
After that we did some walking around...it is a huge place! Every store you could imagine was there! Stopped in at Vera Bradley because I love me some handbags! LOL I got a purse and wallet that would have normally been $125 and I got it for $55. It is soooo cute too. It looks like a giant coin purse. Here is a couple pictures of the purse. After this we went to BJ's to pick up a few things and then headed home to have lunch. After lunch I watched some TV and fell asleep for a little bit. Then made the best 8 point lasagna that I have ever had! I absolutely love the Looney Spoons Cookbook...you can get it from QVC and I think the bookstores have them too! Here is what it looks like:

This dinner was more work than the other meals I have made...definitely a weekend meal. But we have enough leftover to feed us for a few days! It was so good and I bet it will be even better after it sits in the fridge overnight! It is definitely on our list of favorite dinners! I didn't have an evening snack because I am just too full and don't feel like I should eat if I am not hungry...even though that means I didn't get all my points in for the day. Weekly weigh in results and recipe!

Hello there...Happy Saturday!! Another busy day...well at least the beginning of the day. Got up at 7am to some snow on the ground...our nightly lows this week have been between 3 and 13 degrees so the roads were icy. We decided to go to the 9:00 Weight Watchers meeting to give the ice a chance to melt a little. We headed out and I had forgotten to eat anything so we were both really hungry. We had some things we wanted to do after the meeting so we had to plan some lunch. Our meeting wasn't as full as it usually was and there were a lot of people leaving as we were coming in..that should have been a sign right there of how long the meeting was going to go. The meeting was about planning your dinners. We got into groups (which we hate doing) and come up with a dinner that meets the following criteria: 10 points or less, at least 3 power foods and 3 veggies in the meal. Well we decided to use the Baked Turkey and Jack Cheese Chimichungas and a side salad. The Chimichungas are only 6 points a serving and has 5 power foods in it and a side salad with Lettuce, Tomato and cucumbers with light ranch dressing which was 2 points. So its an 8 point dinner! I have had a request to share the recipe. The only thing I do different is I used ground chicken instead of turkey:
 
Baked Turkey and Jack Cheese Chimichangas
Weight Watchers Points - 6
 

No need to fry this traditional Mexican dish: Simply bake until the tortillas are lightly browned and crisp. Serve with spicy salsa and a dollop of sour cream.

2 spray(s) cooking spray
1/2 pound(s) uncooked ground turkey breast
16 oz fat-free canned refried beans
1 3/4 cup(s) fat free salsa
4 1/2 oz canned green chili peppers, mild, drained and diced
1 tsp chili powder
3 Tbs uncooked scallion(s), thinly sliced
1 cup(s) shredded, reduced-fat, Monterey Jack cheese
8 item(s) (large) burrito-size wheat flour tortilla(s)
1 cup(s) fat free salsa
1/2 cup(s) fat-free sour cream

1. Preheat oven to 350ºF. Coat a large skillet with cooking spray. Coat a 13- X 9- X 2-inch baking dish with cooking spray.

2. Add turkey to skillet and cook over medium-high heat until lightly browned, about 5 minutes. Drain any excess liquid from pan and then add beans, 1 3/4 cups of salsa, chili peppers, chili powder and scallions. Cook until heated through, about 3 minutes; stir in cheese.

3. Meanwhile, wrap tortillas in foil; warm in oven for 10 minutes.

4. Assemble chimichangas by spooning about 1/2 cup of turkey mixture onto each tortilla; fold in sides and roll up.

5. Place chimichangas, seam-side down, in prepared baking dish. Bake, uncovered, until tortillas are crisp and browned, about 20 minutes. Serve each topped with 2 tablespoons of salsa and 1 tablespoon of sour cream

Servings: 8

As I said earlier we hadn't eaten breakfast and so when the meeting went on for an hour we were both getting grumpy...LOL We wanted to go to the mall to walk around and do a few things so we ended up going to Cheesecake Factory...don't panic we were good and instead of getting the normal things we would have gotten we ordered something off of their weight management menu. Each meal is less than 550 calories. I got a chicken salad sandwich with a side salad. It was pretty good but the salad wasn't so good because they used the weird lettuce that has all the bitter leaves...I like just a nice romaine and spinach salad but that's ok. We had 2 pieces of bread with a little butter. I counted 20 points for that meal only because of the mayo that was in the salad. I think it was mixed with some greek yogurt but just to be safe that is what I counted.

We went grocery shopping and I got the ingredients for this weeks meals. They will be:

Beef Stew (in the crock pot) - Looney Spoons cookbook
Lasagna - Looney Spoons Cookbook
Hamburgers and baked fries

Each meal will have leftovers for at least 2 nights. We love the Looney Spoons cookbook! We haven't had one recipe that we don't like.

Tonight we had my favorite Fried Chicken & Gravy from our New Dieters Cookbook and I will be having my bag of popcorn for my evening snack.

Oh yeah..your probably wondering how we did on our weigh in...well Kevin lost 3.6! Yay! I lost .8...Booo! However it is that time of the month that all of us women dread and I retain water like crazy!! So that screwed it up...but come next week I should have a good loss. I am just happy that I lost! I didn't exercise as much as I should have this last week so I will have to work harder on that this week!

I'm still here! :)

This has been a super long week!! I didn't blog yesterday because we had some issues with our heating in our house so with all the commotion with the repair guy I didn't get online. It was awkward making dinner and then sitting down to eat when the guy is in our basement...but I did and we had a nice new recipe. I will have to play with it a little though. The chicken was good but a little too many spices...and I forgot to drizzle the butter over the chicken before baking it. Saved some calories I guess! LOL

It has been sooooo cold here in New England! Last night the low was 3 degrees! Tonight it is supposed to get down to around 5. You walk outside and it almost takes the breath out of you! Next week the high is supposed to get up to 50! It is weird how the weather can change so quickly!

I am not looking forward to the weigh in this week. It is that time of month where I retain a lot of water...so I am trying to drink as much as I can to flush it out. I am exhausted!!

Today was a very busy day! Work was hectic but it made the day go very fast. I had to literally drag myself out of bed this morning. Thank goodness there wasn't a lot of traffic because of the holiday so I at least didn't have to deal with that:) I wanted to try something new today. Last week I committed to taking the stairs at work and not using the elevator and doing that helped with my 3.6 pound loss last week. So this week I am going to start walking to the farthest bathroom from where I sit. I was going to go down to the first floor and that way I would use the stairs more...but the receptionist is on that floor and I feel awkward going down there to use the bathroom...if it was me I would be like "what is wrong with YOUR bathroom...LOL So I just decided to walk to the other side of the building and use that one...its actually farther than the one downstairs so that is better I think:) So we will see if that helps!

At lunch I went out for a walk. It was sunny out so I thought it might have warmed up from the 23 degrees it was this morning...so I didn't wear my coat. I am a hot blooded girl and I am always hot! At first it wasn't bad but after the wind started blowing it was probably about the same temp as this morning! By the time I walked around the campus once I was feeling pins and needles in my arms and hands so I decided I better get back inside! I KNOW MOM!! I will wear my coat next time! LOL

After work I needed to stop at BJ's and get some chicken breasts and I got bulk of ground chicken to vacuum pack and have for the baked chimichangas and some egg beaters for making the casserole (might be something we make every couple weeks) and some more fiber one brownies..so good for a sweet treat! Then after I got home I hopped on the treadmill for a half hour! Rested for about 45 minutes and then started dinner. Tonight I made Chicken Tetrizzini...so good!! Here are my meals for the day:

Beautiful Sunday...

Good morning my friends!! I made this breakfast casserole last night and put it in the fridge overnight. It was awesome! It is a layer of hash browns, reduced fat cheddar cheese, minced onion, ham and green peppers and then you pour the egg substitute on top and refrigerate it overnight. Pop it in the oven for an hour in the morning and enjoy! It makes 6 large servings and is only 5 points! I will be making this again for sure. We have enough leftovers for both of us for 2 more breakfasts.

We had it with 3 slices of Oscar Meyer Center Cut Bacon for 2 points. It was a very filling breakfast!

Not sure what I will be doing today. I need to run to the grocery store and pick up a few things I forgot yesterday and maybe go to the mall to walk around a bit. I haven't decided. I still need to get all my fruit and veggies cut up for the week but I will do that this afternoon. I am making Chicken Tetrazzini tonight. Its from the Taste of Home Comfort Food diet cookbook. Very yummy!
 
Not much else going on this morning. After I blogged last night I got on the treadmill for 45 minutes and earned 2 activity points from my active link. I didn't end up eating the popcorn...it was getting too late by the time I was done.

My Day of Meals....

I'm back....LOL! Spent a few hours catching up on Facebook and printed some recipes that I have found on the Weight Watchers website and a few other sites. My goal is to try one new recipe a week. I am finding some good looking ones.

Here are my meals for the day:

BREAKFAST
Weight Watchers Chocolate Mint snack bar = 2 points
I know!! Not a healthy breakfast! Didn't want to eat anything before weigh in!
 
MORNING SNACK

LUNCH


BLTA (Bacon, Lettuce, Turkey & Avocado) minus the Turkey and Avocado = 15 points
Side Salad w/Ranch dressing on the side = 4 points (2 for the dressing and 2 for the croutons)
Total points for Lunch = 19
 
AFTERNOON SNACK
None...I gave up morning and afternoon snack for the yummy lunch!
 
DINNER
All American Thighs = 9 points
Instant mashed potatoes = 3 points
Corn = 2 points
Total points for dinner = 14
 
EVENING SNACK
Bag of Popcorn = 3 points
 
TOTAL POINTS FOR THE DAY - 38!! With one point to spare!
 
Recipe for All American Thighs
 
2/3 cup Grape Jelly
1/2 cup Ketchup
1/3 cup Minced onion
2 Tbsp White vinegar
1 tsp Dry mustard
12 Bone in skinless chicken thighs
 
1. In a small saucepan, stir together grape jelly, ketchup, onion, vinegar and dry mustard.
2. Cook over med-high heat until mixture comes to a boil and the jelly is melted. Remove from heat.
3. Arrange chicken pieces in a 9X13 baking dish (I sprayed it with Pam)
4. Pour sauce evenly over chicken and turn pieces to coat both sides.
5. Bake at 400 degrees for about 40 minutes, until chicken is very tender.
 
Serves 6 (2 thighs)
Weight Watcher points = 9
 
I put together a Breakfast Casserole and put it in the fridge overnight and tomorrow morning Kevin will put it in the oven for 60 minutes...I will take a picture of it and post it tomorrow! Have a great night everyone!!
 
 
 
 

Scale and Non Scale Victories!

Hi! I hope your are all enjoying your Saturday! We had a very busy morning! Woke up a little later than I wanted to. We like to go to the 7:30 Weight Watchers meeting but we ended up going to the 9:00 one because I didn't wake up until almost 7. But that's ok because we had some running around to do after an nothing is opened before 10. So it worked out:) After the meeting we went to Dedham and picked up some things and we decided after having such a good 2 weeks we would treat ourselves by going out to lunch. We haven't been out to eat in over 2 weeks which is huge for us! We figured if we were going to treat ourselves we would go somewhere we love..Red Robin! Before you judge us..know that we looked up the restaurant in this cool app that I have on my smart phone and it gives you all the points of hundreds of restaurants. We figured out exactly what the amount of points we would be using and planned accordingly. Keep in mind Kevin has twice as many points as I do so we had plenty to use..plus we have our 49 extra points which I try not to dip into unless we do something like this.
 
I ordered the BLTA (Bacon, Lettuce, Turkey and Avocado) on a croissant, however I modified it a bit...I had them take off the Turkey and Avocado and basically had a BLT on a croissant...AND I had them put the mayo on the side so I could control how much was on it...sometimes they slather it on there so thick its gross! Instead of steak fries I had a side salad with ranch dressing on the side and instead of putting it on the salad I just dipped my fork in it before I dug into the salad and that way your getting a taste of the dressing with every bite but not that much! I learned that trick at one of the WW meetings a long time ago. It was a very successful lunch. The BLTA would have been 19 points but taking off the Turkey (they always give you ALOT of Turkey) and the Avocado I saved about 4 points I guessed. I put 2 points for the dressing because as I said I barely used much of it.
 
After lunch we took a walk around Patriot Place which is where the New England Patriots play football...they have an outside mall there. We went to the Pro-shop and bought some hats to keep our ears an head warm...it was super windy and COLD! We also had a Non Scale Victory today...we walked down and UP these stairs!!! Not easy! After I walked up I felt good but I was very winded. I have been walking up and down the stairs at work all week and thought this would be a nice challenge. I'm very proud of us! :)
 
After this we went to the grocery store and got all of our foods for the week. The store was a MADHOUSE!! They had alot of good sales. We saved about $26! Now I am watching some TV and relaxing a bit. I am making a yummy dinner tonight and I will take a picture and share it later.

It's Friday!!! :)

Hey everyone...I hope you all had a great Friday! I am feeling a little better today. Still felt a bit achy and had a headache most of the day but not as bad as yesterday. I went back to work and kept my mind busy. Sometimes that is better than just sitting around all day and thinking about it. I wasn't running a fever so I didn't think I would really be that contagious.

I packed my food for the day and forgot my yogurt at home on the counter...wasn't very happy because it is one of my favorite things I eat mid morning...but I survived! I am planning our meals for the week next week so that after our Weight Watchers meeting tomorrow morning we can go next door and do our shopping for the week! Here is the plan:

Saturday - All American Thigh (boneless chicken thigh with a homemade sweet BBQ sauce)
Sunday - Chicken Tetrazzini (from Taste of Home comfort diet cookbook)
Monday - Leftover Chicken Tetrazzini
Tuesday - Faux Fried Chicken (from Looneyspoons cookbook)
Wednesday - Baked Chicken and Jack cheese Chimichangas (Weight Watchers recipe)
Thursday - Leftover Chimichangas
Friday - Parmesan Chicken Cutlets (Weight Watchers recipe)

I am also going to make a breakfast casserole tomorrow to put in the fridge overnight and have it on Sunday morning. That may give us some leftovers for breakfast during the week. I am also going to try a recipe for baked oatmeal.
