Back on track!

Hello everyone!! I am so happy to be back and it was a great day!! I ate good foods and stayed away from the bucket of candy that someone at work puts out by the printer everyday...not just any candy but the best kind...Hershey's chocolate, milky ways, kit kats and M&M's...it took alot to keep me away!! In fact I am sure that I am going through sugar withdrawal! The last month since starting there I had been eating the candy...so that plus all the other eating that I did I ended up gaining 4.6 pounds...which really isn't that bad with the holidays and everything.

Here is what I ate today:

Breakfast - Apples & Cinnamon Oatmeal and a Banana

For Lunch - Ham Sandwich, baby carrots, pizza pasta salad (made out of the same cookbook that I made dinner out of) and babybel light cheese. Sorry didn't take pictures...I am a little out of practice with this taking pictures stuff!

For dinner: Meatless Chili Mac

This was a new dinner I tried out of the Taste of Home's Comfort Food Diet Cookbook. It was really good! I ran the numbers and it is only 4 WW points for 1 1/4 cup serving! I did add a little low fat shredded cheese so that will ad a couple more points. I thought I would share the recipe:

1 large onion, chopped
1 medium green pepper, chopped
1 garlic clove, minced
1 Tbsp olive oil
2 cups water
1 1/2 cups uncooked elbow macaroni (I used dreamfields as it is LOW carb pasta)
1 can (15.5 oz) mild chili beans, undrained
1 can (15.5 oz) great northern beans, rinsed and drained (I didn't have any so I used kidney beans instead)
1 can (14.5 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
4 tsp chili powder
1 tsp salt
1 tsp ground cumin
1/2 cup fat free sour cream

In a large sauce pan or dutch oven, saute the onion, green pepper and garlic in oil until tender. Stir in the water, macaroni beans, tomatoes, tomato sauce, chili powder, salt and cumin. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until macaroni is tender. Top each serving with 1 Tbsp sour cream.

8 servings = 1 1/4 cups serving size
Nutrition facts: 214 calories, 3 grams fat, 3 mg cholesterol, 857 mg sodium, 37 g carbs, 8 grams fiber, 10 g protein.

So all in all I had a great day with my eating and I am really excited to start losing again! Thank you all for your encouraging words! They really help me! Take care and see you tomorrow!

    So, how's the hummus? I tried some nacho cheese flavored hummus once and it was really good! I need to get some.

  5. Hey girl!!! Gonna' have to find that cookbook...love Taste of Home! Doesn't it feel great to be back at it? I lost weight 2 weeks in a row after Christmas and then went crazy eating in restaurants all this week!!! Had way too much fun, and I'm sure I'll show a gain for it tomorrow. My goal for this week is NO RESTAURANT EATING with friends!! I went on a hike today...5.7 miles!!!! It took me 3 hours and I'm so sore now I can barely move...i have no idea how I'm going to make it to the gym in the morning, lol. So good to have you back!!! And I've missed all those yummy food pics too!

  9. I can't believe I just found out about this blog. Your Chili Mac and Cheese looks good. I'll try this one on Friday night.

    As I was surfing the net, I found another mac and cheese recipe at Foodista (http://www.foodista.com) and I personally find it interesting. Check it out sometime soon.
