Yes...you read it right. Kevin and I are giving it another go on Weight Watchers. I know that the reason it hasn't worked before is not the plan...its us. Weight Watchers is the one plan that always seems to work for us...but for one reason or another we end up giving up and going back to our old ways. Alot of things happened this year...and Kevin and I are both emotional eaters and we eat when were are stressed, sad, mad or even happy and bored!! Kevin was promoted to a Supervisor (YAY Honey!!) and I had a loss that hit me really hard last month with my Grandma who had been going downhill for quite a bit of the year and that affected me alot more than I thought it did. She passed away on December 18th and I know that it is a better thing for her and she is at peace now...so now it is time for me to work on myself and get back on track.
I went to the Doctor the other day for a bad cold which turned out to be a respiratory infection and when I got on the scale I didn't see the exact number...but it looked like I had gained about 14 pounds since I was on WW's last..:( But that's OK...it will be coming off plus another 100 pounds and I am NOT going to stop until I have reached that goal! Also for the first time my blood pressure was higher than normal. She said it could have been from my cold...but that also made me more determined to get with it! My Dad has type 2 Diabetes and it is hereditary and just a matter of time before I end up having it if I don't lose weight and get healthy. Also Kevin has type 2 Diabetes and he would love to be able to reduce or eliminate all his meds! I hope that I still have all of your support out there...as when I stopped posting I see that I had 50 followers...I need LOTS of support and it really does keep me going. I will be posting every day and keeping myself on track...
Kevin and I went food shopping yesterday and stocked up on fruits and veggies and things for lunches and dinners for the week. It looks like this week will be a busy one for Kevin and he has his manager training and will be getting home a little later than usual. So we will be eating some frozen dinners with salads for the first week...but then I am planning on trying some of the new recipes out of the WW cookbook. Today I made the Vegetable Soup recipe that is only 1 point per cup...so I will be eating that for lunches this week!! It smells yummy!! Here is the recipe. I have included a picture of the soup that I MADE:)...I didn't put in cauliflower because Kevin isn't a fan of it so I added double the carrots...my favorite veggie!

Fresh Vegetable Soup

Ingredients |
- 2 clove(s) garlic clove(s), minced
- 1 medium onion(s), diced
- 2 medium carrot(s), diced
- 1 medium sweet red pepper(s), diced
- 1 stalk(s) celery, diced
- 2 small zucchini, diced
- 2 cup(s) green cabbage, shredded
- 2 cup(s) Swiss chard, chopped
- 2 cup(s) cauliflower, small florets
- 2 cup(s) broccoli, small florets
- 2 tsp thyme, fresh, fresh, chopped
- 6 cup(s) vegetable broth
- 2 Tbsp parsley, or chives, fresh, chopped
- 1/2 tsp table salt, or to taste
- 1/4 tsp black pepper, or to taste
- 2 Tbsp fresh lemon juice, optional
Instructions |
- Put garlic, vegetables, thyme and broth into a large soup pot. Cover and bring to a boil over high heat; reduce heat to low and simmer, partly covered, about 10 minutes.
- Stir in parsley or chives; season to taste with salt, pepper and lemon juice. Yields about 1 cup per serving.
